- Boneless duck breasts (2-3)
- Jalapeño peppers (fresh if you can take the heat, or canned if not). You can use a Pablano, Banana or Anaheim if you prefer a milder pepper.
- Cream cheese
Debone the duck breasts, pound flat and cut into strips (about 1.5 to 2 inches wide)Cut jalapeños in half and remove seed Place duck on flat surface, place jalapeño half on duck, put SMALL piece of cream cheese in pepper.Roll duck, pepper and cheese into a pin wheel. Roll a strip of bacon around the pinwheel and stick a toothpick (or two) through it.Place on a hot grill (or in the oven on a rack) If you cook them in the oven, you will need to put a pan or cookie sheet beneath to catch the drippings Turn often until the bacon is crisp.Be careful when eating…the cheese is very hot!!!
